Adult Desserts: Kahlua Cookies

Kahlua CookiesA Few weeks ago, we shared some an awesome cheesecake recipe featuring Kahlua. We received A TON of emails, about how great it was, and how much their family/friends enjoyed it. So we thought, with Christmas almost here, and that baking itch hitting many of us again, why not share another recipe. This time, we’re making cookies, with booze of course. And while I know you folks on the west coast like to put “other” things in your baked goods, we don’t have that luxury here, so liqueur will have to do.  Make a batch for your friends, make a batch for your family, and so you don’t end up with a lump of coal for Christmas, you might wanna make THESE cookies for Santa.

 

Kahlua Cookies

2 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1 cup light brown sugar
1 teaspoon vanilla extract
7 tablespoons softened margarine or butter
2 eggs
¼ cup KAHLÚA
3 tablespoons instant espresso
1 tablespoon ground coffee beans
1 cup bittersweet chocolate chunks or chocolate chips

Preheat oven to 375°F.  Combine flour, baking soda, salt and sugars. Make a well in the center of dry ingredients and add softened butter, eggs, Kahlúa, instant espresso, ground coffee and chocolate chunks. Mix all ingredients well to form cookie dough.                                  

Using a small scoop or a heaping tablespoon, drop cookie dough 2 inches apart on cookie sheets lined with parchment paper. Bake cookies in batches for 9 to 11 minutes. Transfer to wire rack to cool.
