A New Holiday Tradition: RumChata Eggnog

It’s finally here! Our favorite time of year, the holidays season! We’re in between the “big 2” and over the years we’ve officially dubbed it Thanksmas. You know, that time before after Halloween when you start thinking about all the amazing foods you’ll inhale during Thanksgiving while ALSO buying and putting up Christmas decorations ridiculously early. We use to laugh at those people, and then we had kids and bought a house, and overnight we became those people.  Seriously though, if I’m climbing up on the roof and risking my life in the name of being festive, I’m gonna need them to be up for at least 60 days so that usually means mid-November through the first week of January. But it’s not just about the lights, it’s about the traditions. As far as I can remember, my dad got up on the roof and lit up two stories worth of awesomeness, while mom made some amazing eggnog for the family. When I got old enough I got up on the roof with him, and I also realized mom made two batches or nog, one of which was “special” for the adults. Fast forward 30 years and I’m up on the roof stringing together lights, my 8-year-old assists me down below holding the ladder, and my wife makes eggnog or coquito for us to enjoy after, both regular and “special”.

Lori’s eggnog and coquito recipes are amazing, both from scratch, but they take some time and a bunch of ingredients. We know not everyone has the time, plus we’ve had times when friends or family came over on short notice during the holidays and we’ve had to get creative so this week we’re sharing one of those recipes. It’s an eggnog spin-off featuring RumChata that we LOVE. It’s super simple, and it’s super DELICIOUS with only 3 ingredients. Give it a try and I swear you’ll find yourself making a big batch every holiday season like we do! Happy holidays!
