The Collins: Peach and Elderflower

Congratulations, you’ve made it halfway through the work week. Wednesday tends to be a big Happy Hour kinda day at a lot of bars an even at home. We thought we would take this chance to feature our cocktail of the week, a tasty one, perfect for a midweek pick-me-up and just as awesome on the weekend. It’s only got a few ingredients and if you can’t find them all, ask your favorite bartender to make this one for you. It features one of my favorite (and under-appreciated) spirits, gin and is rendition on a popular cocktail, the Collins. One of my favorite things about Collins cocktails is its versatility which while be demonstrated in the recipe below.

Peach & Elder-flower Collins

  • 2 oz Bombay Sapphire
  • Juice of half a lemon
  • ½ oz elder-flower cordial
  • One third of a fresh peach or ⅔ oz white peach puree

Crush the peach in a mixing glass before adding all other ingredients and stir with ice. Fine strain into a tall glass filled with ice and top with soda water and stir. Garnish with a wedge of peach.
