Its March already, meaning Carnival & Mardi Gras are here, St. Patty’s day is just around the corner and before you know it, Summer will arrive. With that being said I thought it fitting to start turning my attention towards a popular summer spirit that is probably one of my favorite discoveries since joining the beverage industry; Cachaça. Pronounced Kah-Shah-Sah, this sugarcane based liquor comes to us from Brazil, and much like Cognac, it’s a region based spirit so if it isn’t from Brazil, you’re not drinking Cachaça. Recently I started hearing a buzz about a newer brand that was being launched in the UK (Sorry U.S. Drinkers) called Salto, and as fate would have it, I was recently contacted by a member of  Truffle PR, their public relations firm with some wonderful recipes to share just in time for the kickoff to Rio Carnival on the 5th.

Salto, named after a town in the heart of Brazil’s foremost cachaça-producing region, is made from premium cachaça distilled in Brazil. The rum-like spirit is then imported into England where it is then infused with flavors of bitter orange grapefruit, and lime to create it’s unique and refreshing taste. Salto offers a friendly ABV of just 24%, lower than your typical cachaça brand (38%), which combined with its citrus and bitter flavors gives it a bit more “drink-ability”. With cachaça being the fastest growing spirit in the UK, Salto is the perfect way for UK consumers to experience everything that Brazilian culture is known for.

In homage to the festival of color that makes Brazilian carnival famous throughout the world, Salto has created a range of “Carnival Colored Cocktails. These new cocktails will be officially launched at the Rio Carnival fund-raising evening in aid of the charity “Bringing Research To Life” that will be held in London on the 19th of March 2011 to coincide with Brazilian Carnival. Christmas is right around the corner and you know what that means. Right about now many of us are looking to ease the stress that comes with holiday shopping and party planning while also staying warm and comfy. Lucky for you I’ve got just the remedy. Here are some delicious cocktails that come second only to a warm hug of a loved one to keep you toasty and sane this winter. Nothing says winter like snuggling under a blanket, sitting next to an open fire, and sipping on a warm beverage.

Peppermint Patty:
1/2 Cup of Hot Chocolate
1 oz Rumple Minze Peppermint liqueur
1 oz Godiva Chocolate Liqueur
Add all ingredients together in a mug and stir. Garnish with whippedcream

Spiced Hot Toddy:
1 Cup of Tea (Pick your poison)
1 oz Captain Morgan
5 TBSP Lemon Juice
3 TBSP Honey
1 Stick of Cinnamon
Start with the cup of tea, and start adding all the other ingredients one by one.

Tom & Jerry:

1 Egg
1/2 oz simple syrup or 1 tsp powdered sugar
1 oz dark rum
1 oz Cognac or brandy
hot milk or hot water
grated nutmeg for garnish
Separate the egg white from the egg yolk and beat them separately. Fold the beaten eggs together and place into the glass. Add the sugar or simple syrup, dark rum and brandy. Fill with hot milk or hot water. Stir well. Garnish with grated nutmeg.

Hot Buttered Rum:
1 oz Cruzan Light Rum
1 Tsp sugar
1/2 Tsp Butter
4 Cloves
Add sugar, butter and cloves to a coffee mug. Add in rum and stir. Fill with boiling water.

Pumpkin Latte:

4 oz Coffee
2 oz Hiram Walker Pumpkin Spice Liqueur (Limited)

Add Pumpkin into a cup of coffee and fill to taste with creamer.

Russian Hot Chocolate:
2 Oz Kahlua (Optional – Try Kahlua Hazelnut)
1 oz Stolichnaya Vodka
1 Cup Hot Chocolate
Add Kahlua and Vodka into coffee and stir.

Hot Apple Pie:
1 oz. Tuaca
6 oz. warm apple cider
Fresh whipping cream
Cinnamon
Nutmeg
Cinnamon sticks

Combine Tuaca and apple cider in a coffee mug.Top with whipped cream, Sprinkle cinnamon and nutmeg on top and add a stick of cinnamon

Who doesn’t love tequila? Who doesn’t love lime with their tequila ? Exactly, so when I first heard of a new product that infused the two together to create a uniquely flavored liqueur I just had to get my hands on it. Given (pronounced Jee-Vahn), is a unique blend of premium agave tequila, all natural lime juice, and Sauvignon Blanc grapes, hand crafted through an infusion process in the Cognac region of France. Wait what? Pump the breaks. If you’re like I was, your left eyebrow is probably highly elevated right now. Tequila from France?  Well don’t worry tequila aficionados, it’s only infused there. The tequila is as authentic as it gets, imported from Jalisco, Mexico aka the center of the tequila industry. As for the Sauvignon Blanc Grapes, well you know the French had to throw in their two cents before calling it their own.

First things first, the presentation on this one is amazing. It comes in a sleek and sexy black bottle that looks like my wife’s little black dress. And to top it off , it comes supplied with a cork style enclosure rather than the traditional screw top. So far I’m impressed. Lets hope this Gold Medal Winner at the prestigious San Francisco World Spirits Competition of 2010 can live up to the hype.

Aroma: Tequila, tequila, and more tequila. If I poured this in front of you, you would swear it was Cinco De Mayo. A second sniff and you should be able to notice the citrus tones underneath caused by the lime and grapes.

Taste: I have to say I was pleasantly surprised. I prepared myself for the intense tequila flavor that I was sure would be coming to match it’s intense smell but instead I was met with a great blend of citrus, sour, and tart flavor. Tequila was apparent but took a back seat to all the other flavors which I actually believe help make this drink work. It almost carries a heavy similarity to a wine, like a moscato. I decided to pour this one for all the adults in the house. My first instinct is to use this as a shooter, but after playing around with a few ingredients as well as trying some recipes available at www.Givenliqueur.com, both I and my guests will agree Given is not one dimensional. You can shoot it, sip it, or combine it with ingredients of your choice to make your own signature cocktail. Something as simple as club soda to something as complex as basil leaves and you’ve got your self a party in your mouth. Those familiar with other tequila based liqueurs are probably eager to know how it stacks up against the competition. Well I can honestly say that having tasted several brands such as Tequila Rose, Agavero, Almendrado liqueur, Patron XO, and several other tequila based liqueurs, that Given has a unique and impressive taste that has me wanting more. If I had to compare it to one, it would be the wildly popular Agavero, but only in the sense that they are both going to be enhance cocktail recipes. If I had three hands this one would get three thumbs up, but then that would be awkward and I’d be in a different profession. Given Bisou (Signature Cocktail)

  • 3 oz Given
  • 1 oz Champagne
  • Fresh Mint Leaves

Pour Given with mint leaves into a shaker filled with ice. Shake vigorously and strain into a champagne flute. Slowly add champagne and garnish with a cherry.

Given G

  • 2 oz Given
  • 1.5 oz Gin
  • 4 Basil leaves

Muddle Basil leaves in shaker. Add gin and given into the shaker and shake vigorously. Strain into a glass filled with ice.

Given Punch

  • 2 oz Given
  • 1.5 oz Cachacha
  • 1/2 oz Agave Nectar
  • 1/2 oz Dry Vermouth
  • 5 Fresh Raspberries

Muddle raspberries in shaker.  Add ingredients to the shaker with ice.  Shake well with ice cubes and strain into goblet or rocks glass with ice cubes.  Garnish with lemon wheel
